Homemade Chicken Noodle Soup

My husband hasn’t been feeling very well the last couple of days and requested chicken noodle soup. I thought, I can either go to the store and buy canned soup, or make it from scratch (for close to the same price) and have several meals. So…I decided to make it from scratch! It turned out delicious and was super simple! I ended up with enough soup for dinner last night as well as enough for probably 4 more generous servings. Well worth the little effort and definitely a much better value than canned soup!

Ingredients:

1 lb chicken breast (or left over turkey)

2 Tablespoons butter

1 cup celery

1 cup chopped onions

1 cup chopped carrots

3 cloves of garlic

1 1/2 cups egg noodles

48 oz chicken broth

32 oz vegetable broth

1/2 teaspoon poultry seasoning

1/2 teaspoon basil

1/2 teaspoon oregano

Directions:

Cook your chicken. I like to cook mine in a cast iron pan in the oven at 350 for about 20-25 minutes or until done. I seasoned it with garlic powder, onion powered, a little poultry seasoning and black pepper. I also added a little of the chicken broth to help with keeping it moist. Once done, cool, and then use a fork to shred.

Sauté your carrots, celery, onion, and garlic in 2 tablespoons of butter until soft.

Mix sautéed veggies, chicken, both broths, oregano, basil, and poultry seasoning in a large pot. Bring to a boil, reduce heat and simmer about 30 minutes. Add in the egg noodles and simmer another 20 minutes or until noodles are soft.

Serve and enjoy!!

Delicious Homemade Taco Soup

Homemade soups are one of my favorite meals. They are incredibly easy to make and for busy nights it’s so convenient to have something ready to go. For us Tuesday nights are Ladies bible study nights and Wednesday’s we have our midweek church services. This means we are usually pressed for time those nights and having something cooking in the crockpot or something we can heat up makes for a much less chaotic night!

Growing up my mom used to make this soup and it has always been a meal I look forward to! If you are looking for a tasty family friendly meal give it a shot and let me know what you think!!

Ingredients:

1 lb ground beef

1/2 cup chopped onion

2-3 cloves of garlic

1 1/2 cups water

2 16 oz cans stewed Italian tomatoes

1 16 oz can Kidney beans

1 16 oz can tomato sauce

1 4 oz can chopped green chili’s

1 packet of taco seasoning

Cheese

Fresh tomatoesFresh onionsGreen onionsSour creamCilantro SalsaFritos

Directions:

1) Brown ground beef, onions, garlic and fresh ground pepper together in a skillet.2) In a large pan (or crock pot) combine browned ground beef mixture, stewed tomatoes, tomato sauce, kidney beans, green chili’s, water and taco seasoning. 3) cook over medium heat until boiling, reduce heat, cover and simmer for at least 45 minutes. (If in crockpot cook on low for 6-8 hours or medium for 4 hours)4) Serve in a bowl over Frito chips and topped with your favorite taco toppings. Enjoy!!*Note if you like more spice you can add more green chili’s, jalapeños, hot sauce or any peppers of your choice and just add to taste!

Award Winning Chili!

The air has started cooling here. The leaves are turning. And I find myself craving the cold weather comfort foods! My husband has spent the last few days tackling our winter firewood supply and I thought he would enjoy a hot bowl of chili and cornbread for dinner. It has always been one of our favorites, and is something you can whip up and serve immediately. Or, you can put it in the crockpot and let it cook all day so it’s ready when you are. Try it out and let us know what you think!

Ingredients

1 1/2 lbs ground beef

1 large green bell pepper (chopped)

1 large white onion (chopped)

3 cloves garlic (minced)

3 TBSP chili powder

1 can 14.5 oz diced tomatoes, undrained

1 can 14.5 oz red kidney beans, rinsed

1 can 14.5 oz white chili beans, rinsed

1/3 cup A.1. Original sauce

1/2 cup water

Directions

1) Brown your ground beef, onions, peppers, and garlic in a frying pan.

2) Combine browned ground beef mixture with beans, tomatoes, chili powder, A.1. Sauce, and water in a large pot or crock pot. Cover and simmer about 45 minute on high or at least 3-4 hours on low.

While mine is cooking I like to make homemade honey corn bread to go with it!

Ingredients

1 cup ground cornmeal

1 cup all purpose flour

1/2 tsp salt

1 Tbsp baking powder

1 egg

1 cup milk

1/4 cup butter (softened)

1/2 cup honey

Directions

1) combine all ingredients in a bowl mix until all clumps are gone.

2) pour into a greased pan. Drizzle honey on top if you like. Bake at 375 degree (190 Celsius) for about 30-35 minutes.

Finally….

Serve with your favorite toppings like sour cream, shredded cheese, and fresh white onions. Enjoy!!

Vegetable Frittata

This is one of our favorite breakfast recipes in our house! It is something I can make up at the beginning of the week and have ready each morning in less than a minute. It is extremely easy as well as healthy (if you want it to be!), and it makes our morning routine quick and easy. It’s also hearty enough that it won’t leave you hungry in a couple of hours. So to me that is a win all around! You can make it with basically anything you like. Sometime we will use ham, bacon, or sausage. But mostly we use fresh veggies just to keep the calories down a bit. This one I am sharing today is a pretty simple on because I am just using the veggies we had in our fridge. But anything you like will taste amazing in it! Ingredients:

12 eggs

1/4 cup diced onion

mini bell peppers

3 cloves garlic

1/4 cup cheddar cheese

splash of milk

salt and pepper to taste

Directions:

  • Preheat your oven to 400 degrees F (204 degrees C)
  • In a greased pie plate, whisk together 12 eggs and a splash of milk. Once it is a scrambled egg consistency, mix in veggies, salt, and pepper. On top, add your cheese.
  • In a 400 degree oven, bake for 25-30 minutes, or until a tooth pick inserted in the center comes out clean.
  • Slice, serve, and enjoy!!

I cut ours into 8-10 slices, refrigerate, and then pull out slices as needed each morning!
