Apple Fritter Bread

This recipe is our families take on other recipes I’ve seen floating around. We are big Dutch apple pie fans and thought a crumble topping would take this to another level and oh man, Did it ever! It is simple, fun, and irresistible (and tastes amazing along side a cup of coffee)! Definitely a new family favorite.I found these cute little mini loaf pans at Lifeway (http://m.lifeway.com/Product/give-thanks-mini-loaf-pan-P006169314) and absolutely love them! I’m thinking of using these as Christmas gifts for friends and family and include one of our favorite breads as well as the recipe for them to make for themselves. It would be a unique and inexpensive gift that I’m sure everyone would appreciate!

Ingredients:

1/3 cup brown sugar

1 teaspoon ground cinnamon

2/3 cup white sugar

1/2 cup butter softened

2 eggs

1 1/2 teaspoons vanilla extract

1 1/2 cups all purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk

2 apples (any kind) peeled and chopped, then mixed with 2 Tablespoons granulated sugar and 1 teaspoon cinnamon

Crumble topping:

1/3 cup packed brown sugar

2 Tablespoons all-purpose flour

1/8 teaspoon ground cinnamon

1 tablespoon butter-melted

Mix together brown sugar, flour and cinnamon in a small bowl. Cut in 1 tablespoon melted butter. Mixture will be somewhat clumpy.

Old fashioned glaze:

1/2 cup powdered sugar

2-3 Tablespoons milk or cream (depending on desired thickness)

Directions:

Preheat Oven to 350 degrees (about 176 Celsius), grease a 9X5 loaf pan or 3 mini loaf pans.

Mix brown sugar and cinnamon in a bowl and set aside.

In another medium sized bowl, beat white sugar and butter until smooth and creamy.

Beat in eggs, one at a time, until blended in. Add in vanilla extract.

Combine flour and baking soda and then add into creamed butter mixture until well blended. Then add in milk and stir until smooth.

Pour some of your batter into prepared pan(s) (half of the batter for 9X5 pan or about 1/3 full in your mini loaf pans) add half of the apples and half of the brown sugar/cinnamon mixture-lightly pat the apples in and swirl brown sugar mixture through apples using a knife.

Pour remaining batter in and add remaining apples and brown sugar mixture- repeating patting and swirling.

Bake in a preheated oven for about 30 minutes then add your crumble topping and continue to bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Make your old fashioned glaze by combining powdered sugar and cream until smooth

Let your bread cool for about 20 minutes the drizzle with glaze.

Serve and enjoy!

Scotched Eggs

As a lot of you know I often make breakfasts that are quick and easy to grab and go. Kenny works really early and leaves the house by 5:00AM every morning. This means he needs something he can eat while on his way to work, that will give him energy, and will give him enough to keep him full. He also likes variety. So I asked him yesterday what he would like for the next few days and he chose Scotched Eggs.

A friend of his from work actually introduced us to Scotched Eggs a couple of years ago. We had never heard of them, and honestly, were a little scared to try them! But they are seriously AMAZING! You can use any kind of sausage and spices you want, make them more savory for a dinner or appetizer dish, or like we did today for breakfast! It is quick and easy to make, delicious tasting, and something that is easily reheated in the morning for Kenny’s breakfast! I hope you enjoy them as much as we do!

Ingredients:

  • Eggs, hard boiled
  • Sausage (we chose maple flavored because we are using them for breakfast and YUM!)
  • Bread crumbs (again you can use plain bread crumbs or seasoned bread crumbs depending on what you are making them for)

Directions:

Boil your eggs for about 11-12 minutes.

Rinse them and let them cool completely. If they are still warm the sausage won’t stick properly.

Peel your eggs

Make a thin patty with your sausage.

Place an egg on top of the sausage patty,

Wrap the sausage around the egg and form a “snow ball”, making sure the sausage is secure and free of holes.

Roll in bread crumbs.

Place coated eggs on to a cookie sheet. I covered my cookie sheet in foil for easy clean up.

Bake at 400 degrees (204 degrees Celsius) for about 30-35 minutes.

Serve and enjoy!!

Vegetable Frittata

This is one of our favorite breakfast recipes in our house! It is something I can make up at the beginning of the week and have ready each morning in less than a minute. It is extremely easy as well as healthy (if you want it to be!), and it makes our morning routine quick and easy. It’s also hearty enough that it won’t leave you hungry in a couple of hours. So to me that is a win all around! You can make it with basically anything you like. Sometime we will use ham, bacon, or sausage. But mostly we use fresh veggies just to keep the calories down a bit. This one I am sharing today is a pretty simple on because I am just using the veggies we had in our fridge. But anything you like will taste amazing in it! Ingredients:

12 eggs

1/4 cup diced onion

mini bell peppers

3 cloves garlic

1/4 cup cheddar cheese

splash of milk

salt and pepper to taste

Directions:

  • Preheat your oven to 400 degrees F (204 degrees C)
  • In a greased pie plate, whisk together 12 eggs and a splash of milk. Once it is a scrambled egg consistency, mix in veggies, salt, and pepper. On top, add your cheese.
  • In a 400 degree oven, bake for 25-30 minutes, or until a tooth pick inserted in the center comes out clean.
  • Slice, serve, and enjoy!!

I cut ours into 8-10 slices, refrigerate, and then pull out slices as needed each morning!
