Homemade Chicken Noodle Soup

My husband hasn’t been feeling very well the last couple of days and requested chicken noodle soup. I thought, I can either go to the store and buy canned soup, or make it from scratch (for close to the same price) and have several meals. So…I decided to make it from scratch! It turned out delicious and was super simple! I ended up with enough soup for dinner last night as well as enough for probably 4 more generous servings. Well worth the little effort and definitely a much better value than canned soup!

Ingredients:

1 lb chicken breast (or left over turkey)

2 Tablespoons butter

1 cup celery

1 cup chopped onions

1 cup chopped carrots

3 cloves of garlic

1 1/2 cups egg noodles

48 oz chicken broth

32 oz vegetable broth

1/2 teaspoon poultry seasoning

1/2 teaspoon basil

1/2 teaspoon oregano

Directions:

Cook your chicken. I like to cook mine in a cast iron pan in the oven at 350 for about 20-25 minutes or until done. I seasoned it with garlic powder, onion powered, a little poultry seasoning and black pepper. I also added a little of the chicken broth to help with keeping it moist. Once done, cool, and then use a fork to shred.

Sauté your carrots, celery, onion, and garlic in 2 tablespoons of butter until soft.

Mix sautéed veggies, chicken, both broths, oregano, basil, and poultry seasoning in a large pot. Bring to a boil, reduce heat and simmer about 30 minutes. Add in the egg noodles and simmer another 20 minutes or until noodles are soft.

Serve and enjoy!!

Classic Lasagna Soup

With winter weather quickly approaching us here in the Inland Northwest, soups are going to be a regular on our menu. Not only is it a winter staple, it is also a necessity. The last couple of years we have had intense wind storms that leave us without power for up to a week at a time. We are prepared with a generator and wood stove but having soups ready to go in the freezer has been a huge blessing in the past! All I have to do is pull it out of the freezer and heat it up on the wood stove… easy, home cooked meal ready to go in minutes, even in a power outage!

This soup is beyond delicious! It is sure to please your family or even dinner guests. (And my daughter and I had a lot of fun making it together!) Let me know what you think once you’ve tried it! Also, what are some of your favorite winter comfort foods?

Ingredients:

1/2 lb ground beef

1/2 lb Italian sausage

1 onion-diced

5 cloves fresh garlic

5 leaves fresh basil

1/4 teaspoon red pepper flakes

1 24oz traditional spaghetti sauce

8 cups chicken broth

1 14oz can crushed tomatoes

2 Tablespoons tomato paste

2 Teaspoons balsamic vinegar

1 1/2 Teaspoons sugar

1 1/2 Tablespoons Italian seasoning

10 uncooked lasagna noodles, broken into small pieces

3/4 cup heavy cream divided

4 Tablespoons ricotta cheese

Garnish:

Ricotta cheese

Mozzarella cheese

Parmesan cheese

Fresh basil

Directions:

In a pan brown ground beef, Italian sausage, onions, garlic, and red pepper flakes. Drain any excess grease then move to a large pot.Add spaghetti sauce, 6 cups chicken broth, 1/2 cup heavy cream, tomato paste, balsamic vinegar, sugar, Italian seasoning, basil, 4 Tablespoons ricotta cheese, and broken lasagna noodles.Add in 1/4 cup heavy cream and 2 cups chicken broth. Cook another 5 minutes Served garnished with ricotta cheese, mozzarella cheese, Parmesan cheese and basil. (I also added garlic cheese bread on the side!) Enjoy and have a blessed day!!!

Cheese Rolls


We are headed to a friends house tonight for a lasagna dinner. I decided to bring one of our favorite sides and thought I would share it with you guys too!

This recipe is actually one of my mother-in-laws. Kenny begged me to figure out how to make them for him. In fact, all of our holiday gatherings  have to include these rolls, otherwise the holiday is just not complete! So I talked with his mom and she came over and gave me a lesson on the proper cheese roll technique. Give them a try and let us know what you think of them!

Dough Ingredients:

3/4 cups + 3 Tbsp water

3 cups bread flour

2 tablespoons dry milk

3 1/2 tablespoons sugar

1 teaspoon salt

3 tablespoons softened butter

2 teaspoons (one packet) rapid rise yeast

Other Ingredients:

Butter, softened

Garlic powder

Onion powder

Italian seasoning

About 2 cups shredded cheese

Directions:

Combine all ingredients and mix well. Once completely mixed together, cover, set aside and let rise for about 45 minutes at warm room temperature.


Now for the rolls!

Take your dough


And roll it out.


Spread a thin layer of softened butter all over your rolled out dough. Then sprinkle with garlic powder, onion powder, and Italian seasoning.


Add 1 1/2 to 2 cups of shredded cheese.


Roll it up tight


Once rolled pinch the loose end closed


Cut into 1 1/2 to 2 inch sections.


Place into a greased pan.


Cover and let rise for about 45 minutes.


They should puff up quite a bit


After rising,  bake in a preheated, 325 degree  (162 degrees Celsius) oven for about 25 minutes. Or golden brown and when tapped the rolls sound hollow.

Serve warm with butter and enjoy!!!
